Quetzal cooks College Street over a wood fire.

A long live-fire hearth, heirloom corn nixtamalized in-house, and one MICHELIN star.

Quetzal is at 419 College St., which the 2026 guide lists at one star and $$$$. It is also a short walk from Bar Raval, at 505 College, a Bib Gourmand at $$: two ends of the same street.

Pushing through the timber door on College Street near Kensington Market, guests are greeted by the intoxicating scent of burning white oak, sweet charred heirloom corn, and roasted dried chilies curling from a monumental 26-foot wood-fired hearth.

The kitchen nixtamalizes heirloom Mexican landrace corn in-house daily, pressing steaming tortillas on a glowing comal to accompany dry-aged Ontario beef ribeye rubbed in charred chilies, whole wood-roasted trout, and complex Oaxacan black moles simmered for days.

Beneath an undulating canvas ceiling evoking a breezy Mexican palapa, the room pulses with upbeat rhythms, sizzling cast iron, and bartenders shaking artisanal mezcalitas infused with smoked salt and epazote.

Holding a Michelin star, Quetzal reclaims Mexican gastronomy from street-taco fast casual, demonstrating that ancestral heirloom grains and live-fire woodcraft belong in the pantheon of global fine dining.
