La Devozione builds a tasting menu from dry pasta.
An oval counter on West 16th Street devoted to bronze-die shapes from Pastificio Di Martino.
Inside the bustling concourse of Chelsea Market, La Devozione reveals an intimate 30-seat oval counter surrounded by polished copper cookware and glowing overhead spotlights.
Dedicated exclusively to Pastificio Di Martino's 126 dry pasta shapes: spaghetti al pomodoro cooked in sweet Vesuvian tomato water, candele spezzate with Genovese ragu, and paccheri with sea urchin.
The kitchen is an arena where pasta cooks time boiling water with stopwatch precision, plating each pasta course at the exact millisecond of al dente perfection.
La Devozione elevates Italian dry pasta into a high-art tasting menu, proving that bronze-die durum wheat is as noble as any luxury ingredient.
