Hayato gives a long dinner a clear shape.
Brandon Go’s seven seats, no recorded music and a kaiseki menu the guide rates at two stars.
Hayato is Suite 126 of 1320 E. 7th St., the same building as Pizzeria Bianco in the previous chapter. The walk between them is short; the price bands, $$ and $$$$, are as far apart as the guide goes.
Behind a minimalist noren curtain at Row DTLA, Master Brandon Go welcomes just seven guests per evening to a single immaculate Japanese hinoki cypress counter.
Kaiseki pacing unfolds with meditative stillness: wild binchotan-grilled amadai with crisp edible scales, delicate lotus root dumplings floating in dashi extracted from aged Rishiri kelp, and sweet Dungeness crab served in its carapace.
The room is devoid of recorded music, animated only by the whisper of water simmering in iron kettles, the rhythmic tap of Japanese sashimi knives, and Go's thoughtful explanations of historical tea ceremony dining.
Holding two Michelin stars, Hayato is widely revered as the most authentic translation of Kyoto kaiseki discipline anywhere in the Western Hemisphere.
